    For 2 large chicken breasts

  • 1 level dessertspoon Mortimer chocolate powder
  • 1 level teaspoon mild chilli powder
  • ½ level teaspoon ground cumin
  • 1 level teaspoon paprika

Method

Mix all the spices together with the chocolate powder and spread over a small plate.

Cut diagonal slits into the chicken breast, brush with vegetable oil, then roll in the spice mixture to coat.

BBQ or grill the chicken breast until cooked through.

If you think of chocolate as a spice, then it makes perfect sense to use it in savoury recipes.   The cocoa bean is similar to nutmeg, in that it is the seed of an evergreen tree.   Like nutmeg the cocoa bean is bitter.   It is the addition of sugar that makes chocolate palatable.   Spices are blended together to give exciting flavours to food.   Chocolate as a spice blends well with chilli.   Using this as a basis, I have come up with a recipe for a rub, to really spice up meat for the BBQ.
