Serves 3-4 people
  • 25g Mortimer chocolate powder
  • 1 rabbit (or chicken) jointed
  • 2 tablespoons olive oil
  • 6 shallots or 1 large onion
  • Clove of garlic crushed
  • 3 rashes of streaky bacon
  • 2 large carrots
  • Sprig of thyme
  • 1 bay leaf
  • 1 cup (250ml) red wine
  • 1 cup (250ml) water
  • Salt and pepper

Method

In a casserole dish that can be put on the stove as well as in the oven, heat 1 tablespoon of oil and gently fry the onion, bacon and garlic until golden.

In a frying pan heat the remaining oil and brown the rabbit joints. Add the rabbit to the casserole with the rest of the ingredients, season and heat until simmering.

Put a lid on the casserole and place in a moderate oven 140 deg C, gas mark 1, for 2 hours. Remove from the oven.

If required the sauce can be thickened. Remove the joints and keep warm.

Mix 1 dessert spoon of cornflour with a little water and add to the casserole. Heat on the stove until thickened. Replace the rabbit joints.

Serve with jacket potatoes, mash or brown rice and a green vegetable for colour.
