    Serves 4

  • 1 tablespoon Mortimer chocolate powder
  • 450g mince beef
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 1-2 gloves of garlic
  • 1 large carrot, grated
  • 400g tin of chopped tomatoes
  • 400g tin of kidney beans
  • 2 bay leaves
  • 1 teaspoon caster sugar
  • 1 teaspoon chilli powder
  • Salt and pepper

Method

Put tomatoes into a saucepan over a medium heat. Heat oil in a frying pan and soften the onion. Add the garlic to the onion, stir for 1 minute then add to the tomatoes.

Fry the mince until brown and add to the tomatoes. Add the chocolate powder, grated carrot, kidney beans bay leaves, caster sugar, chilli and salt and pepper.

Simmer for 35 minutes , check seasoning and serve with rice

The chocolate powder gives depth to the dark and spicy sauce. The chocolate also helps to thicken it up.
