Why are we different?

Rather than buy cocoa products from European multinational processors who have blended beans from many different origins, the Mortimer Chocolate Company aims to find suppliers in the origin countries, who use the same processes to make their products, but use single origin cocoa beans from their locality so that we know exactly where the beans are from.

Once we have identified a flavoursome cocoa to make into chocolate, we blend it with a small amount of sugar to create a high cocoa solids plain chocolate, which contains nothing else other than cocoa mass and sugar, we use no additives at all.   Also, we make a chocolate powder, not a bar, so that we do not subject the chocolate to the process of conching or cooling, and the cocoa is not over-processed, retaining more of the cocoa’s unique flavour.   We do, however, control the temperature carefully, so that the resultant chocolate powder is tempered.   This means that we optimise the creation of the most stable crystal form of cocoa butter inside the chocolate.   This makes our chocolate very stable and gives it a beautiful shiny appearance when molten.

We make 100% chocolate powder that contains high levels of cocoa solids.   We want our chocolate to be enjoyed as a drink, just as it was first intended and as a powder it helps the chocolate to dissolve.   Chocolate and cocoa is difficult to dissolve normally and many companies use other processes, or additives to assist its solubility, but we make our chocolate into a powder form to do the same job.   Coincidentally, this makes it melt much more easily than chocolate bars, so it can easily be used in cooking.   In fact, because it is a premium high cocoa solids chocolate, with a superior flavour, it is ideal for cooking.  Its flavour is carried through to the recipe far better than other, sweeter chocolates, so that your next dinner party chocolate dessert will be simply outstanding!

The ordering process

Currently, we and our product prices are too small to warrant getting a credit card account. We would need to pay a large fixed fee to the provider, which, because of the proportionally small cost of our product, we would either have to pass on (which you, the customer, wouldn't want) or pay ourselves (which we can't afford). We'd rather make sure of the product quality with the money saved! When our internet sales volumes are bigger and credit card charges to us fall, we'll be able to change our policy. For now though, it's a cheque.

We ask that you fill in the order form so that we know what you want and where to send it. If you include your telephone number, we can always call you if there is an issue. Please allow a little time to receive your products as we occasionally have problems with cocoa arriving with us on time. After all, it's a long way by boat from South America or West Africa! Normally we will dispatch your order straight away. If we really can't supply you then we'll tell you.

And don't worry, we are not going to let your details go to any other company. We too have been the victims of junk mail and phone calls because some company we used has sold on our details. We are in business to sell chocolate, NOT information. We want you to indulge yourself with our chocolate and wouldn't want the moment spoilt by a telesales person.

West Africa

We’ve blended cocoa liquors from Forestero-type cocoas from Ghana, the Ivory Coast and Nigeria to produce a chocolate with a rounded flavour, having the raisin and sultana notes typical of this region.   This is a mellow, dark chocolate with a deep and comforting chocolate flavour.

Ecuador

There are over 60,000 growers of cocoa in Ecuador and over half of these are smallholders with just a few hectares of land.   Here there is a variant of the Forestero cocoa called Arriba, especially common in the vicinity of the Rio Guayas.   This has a finer flavour than the standard Forestero, with a heady chocolate aroma.   The dark chocolate flavour carries with it a hint of tropical spices and smoky tobacco.

Venezuela

Here, the cocoa grows almost in sight of the blue waters of the Caribbean and it is here that the worlds finest cocoa, Criollo is to be found, but the majority of cocoa in Venezuela is a cross between Criollo and the Brazilian Amelonado cocoa, which still has a fine flavour and does not cost the earth!   Our chocolate has a rich, plummy dark chocolate flavour, with a nutty aftertaste.

Ghana

Ghana has long produced quality cocoa that has been prized by European chocolatiers.   It has a deep and fruity taste and is the mainstay of the majority of premium European chocolates.   From the Western part of Ghana, towards the border with the Ivory Coast, we get a shade grown cocoa from a small co-operative.   It has a fantastic floral fruity smell and we use it to make a rich, red mellow dark chocolate, which carries those typically Ghanaian fruity flavours!
